Position:Head of Food
Location: 55-57 The Pavement, Clapham, London, SW4 0JQ, United Kingdom
Salary: £55k-40h basis-Monday to Friday

The Role
- As Head of Food, you will be in charge of all things food & drink. You will drive the direction of our menu and manage the new menu launch process into our restaurants
- You will work alongside our Executive Chef, Sercan, who created our Mediterranean inspired menu to develop new items for our menu.
- You will be the guardian of our theoretical GP, collaborating closely with Finance on pricing strategy, & Supply Chain on cost of goods
- You will have a strong operational focus, ensuring all new menu items are easy to execute & deliver consistently across our sites
- You will be in charge of all food related systems, such as EPOS, recipe management, nutrition & allergens
- Megan’s began its life as small antique shop on the Kings Road in 2002. We have since opened in more neighbourhoods & Megan’s has blossomed into the much-loved community hub that it is today
The Day to Day
New Menu Launches
- Drive the direction of our food & drink offering, keeping up to date with food & drink trends, competitor activity & using data to influence decisions
- Lead our new menu launches, from conception through to delivery in sites, including but not limited to:Oversee development of new items, writing briefs for the executive chef & leading drinks development
Work closely with finance to decide pricing strategy & ensure theoretical GP is in line with business KPIs
Manage trial process
Lead training of new items out into the business
Follow up to ensure launch is being correctly & consistently delivered in sites
- Monthly item sales analysis to evaluate menu performance & identify areas for improvement
Lead Commercial Department
- Lead food & commercial strategy, aligning to business goals to support the overarching business strategy
- Deliver ad-hoc projects as required by the business, such as new food & drink offerings to drive sales or cost saving initiatives
- Work closely with Marketing to deliver food & drink offerings for Marketing campaigns & business initiatives
- Work closely with Supply Chain to source new SKUs, mitigate inflation & optimise supply chain to create savings
Back of House Operations
- Strong operational focus to ensure dishes can be delivered efficiently & consistently within our kitchen & bar model
- Optimise kitchen & bar processes & tools for simplicity, efficiency & consistency
- Work closely with operations to ensure food quality & consistency across our sites
Stock & Systems
- Liaise with finance and procurement on stock processes and support where needed
- Manage Enterprise recipe management system
- Manage Zonal EPOS system
- Manage Nutritics
- Manage Tenkites allergen guide & modification guide
Experience & Qualities Criteria
- 3 years experience in a similar role within the hospitality industry
- You will be creative with a passion for food & drink
- Experience developing food & drink for a multi-site business
- Tech savvy and computer-literate with strong office-based computer skills (particularly Excel and PowerPoint), comfortable analysing large datasets on excel
- Commercially minded with strong attention to detail
- Proactive self-starter, open to change and comfortable working in a fast-paced environment
- A flexible ‘hands-on’ approach – must be comfortable in a kitchen, behind the bar & behind a laptop
- Excellent communication skills, able to build good relationships with suppliers, colleagues and key stakeholders
